Prime Rib

This meat turns out moist and tender every time. . .

 

Ingredients:

1 tablespoon ground mustard
1 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon ground allspice
1/4 teaspoon pepper
1 boneless beef rib roast (4-5 pounds), rolled and tied
2 garlic cloves, cut into slivers
1/4 teaspoon of fresh basil

 

Directions:

  1. In a small bowl, combine mustard, salt, paprika, allspice and pepper. 
  2. Using a sharp knife cut long deep slits in the top of the roast, approx. 1 inch apart
  3. Stuff each slit with garlic, basil and a small amount of the spice mixture.
  4. Rub remaining spice mixture on the outside of the roast
  5. Place in a shallow roasting pan.  Bake uncovered at 325 degrees for 2 1/2 hours or until internal tempature reaches 150 degrees
  6. Slice and serve
